Sunflower Grad Cake

Graduation season is here! Are you guys making a lot of grad cakes right  now? I had the opportunity last week to make a cake for my son’s best friend. She is a very sweet girl, and I was happy to make it for her. I included the elements in the cake that she requested: the colors of red and black, a sunflower (her favorite flower), and paw prints to represent her desire to open her own small animal care business. And of course we had to include the grad cap and tassel to represent her school. (Instructions on how to make the cap and tassel can be found  in our Book Smarts DVD.)
I took some photos of the process I used while making the sunflower and thought you might like to see them, so here we go:

I used yellow gumpaste (Wilton premade works very well) to cut out two of the sunflower shapes.

Putting the petal on my cel pad, I used my ball tool to thin the cornstarch dusted petals. I put most of the pressure on the middle of the petals, because sunflower  petals are a little bit wider in the middle than they are on the two ends. I avoided thinning too much where the petals join the center portion, because sunflowers (and daisies) are notorious for breaking in that vulnerable spot.

After the thinning was done, I used the veining tool to add some vertical lines to the inside of the petals.

The flower was  placed into a cupped former lined with foil. I pinched the tips of the petals to give them  some movement and make them more life-like. Petals were propped with paper toweling in a random pattern to give the petals a natural look.
I repeated the exact same process with the second layer, but I did not glue the two pieces together. The reason for this is because I wanted them to dry in the proper shape together, but I needed to be able to  separate the pieces later for dusting.
In order to speed up the process of drying, I placed them into my dehydrator. (I made two flowers; I always make extra for breakage.)
This is Bessy. She may be old, she may be ratty and held together with masking tape, but she is a faithful and loyal friend who always gets the job done. She is a Nesco food dehydrator that I got at Walmart years ago for about $35. I use her constantly for so many items. I could not live without her. If you invest in one, I recommend that you get one with a temperate regulator. Always use the coolest temperature setting so that your items do not melt.
After the flower was fully dry, it was time to dust. The best part!  Dusting the flower just makes it come to life, and is so much fun! My dusting process was as follows: The entire flower got a light dusting with buttercup yellow. The lower portion of the petals were dusted with a combo of sunflower and pumpkin. The centers of the petals were hit with some daffodil yellow. The tips also got a little bit of the sunflower color. Then the entire flower got a very very light dusting with yellow luster dust, just to brighten it up a bit.
Remember  that I said this type of flower is known for petal breakage? Yep, happens almost every time! ACK! Here you see a petal glued back on with just a little bit of melted white chocolate. The break was low enough on the petal that it will be covered by the center once applied.
I used a silicone push mold to make the center. Brown gumpaste was pushed into the mold, and popped right out. So easy it feels like cheating.
A little bit of dark brown petal dust was applied to the center. Then I brushed the center with just a little bit of  shortening to give it a little sheen and wake it up. We don’t want a sleepy sunflower! 🙂
Now onto the cake for a minute:
I wanted extra height on the cake tiers, so that the sunflower and stem would be in the correct proportion. We did not need any more extra servings of cake, so I increased the height by using fomecore under the tiers. I used  pieces of  1/2 inch  fomecore taped together, and then covered that with Glad Press and Seal.
I used three pieces of fomecore for the lower tier, and 2 pieces for the upper tier. Then I proceeded to ice and stack  per my normal techniques. (You can learn my technique for smooth icing and stacking in our DVDs available here.)
The finished flower was then attached to the side of the cake with a little bit of melted chocolate. Ta da!! Isn’t it pretty! I love how the yellow pops against the red and black.
And the finished cake. Nicole was thrilled with it, and I was very happy that she was happy.

Name That DVD!

Hello everyone! We had a very busy week shooting our next DVD. I want to thank my dear friend Heather, and my son D, for assisting in the shooting this time. I really could not do it without that extra set of hands and eyes, so thank you both so much!
 
 
I thought you guys might like to see a few behind the scenes shots of us filming in my kitchen.
 
 
 
Video Specialties comes to my home with 3 cameras, a monitor and on site mixer. That allows us to get shots and close ups from 3 different angles while I am working.
 
 
 
 
To the left you can see the main camera, the one I look into when I am speaking to you. The one to the right takes closeups when I work on that side of the cake.
 
 
 
 
Here is the mixer and monitor that Todd, my video guy, and my assistant ( Wendy, Heather, or D) watch to see how the shot will look on TV. This way we can ensure that the instruction can be seen well, with nothing blocking the view on screen.
 
 
 

Here I am doing a little prep work off camera. (Oh my, look at that chicken neck on me! Ack!) This is the 9th video we have done, and we have gained a lot of experience along the way. We strive to keep the quality we are known for high, while throwing in a few new things to keep it interesting for you.

The aftermath. And guess what; it still looks like this because I had a cake order for this weekend and did not have time to clean up the carnage. That is on today’s agenda. Fun Saturday! LOL

And if those previous photos were not entertaining enough, I found even a few more. These are a little bit further down the road in my decorating career. You can see that I got bolder and braver as time went on! 🙂

 

 

This was done for my son during my star tip phase. I was too scared to try to ice it smooth, so I obviously thought this was a good idea at the time. Look at the left hand side of Pikachu; you can see the rows of stars. I failed to randomize the rows, LOL. This was the first time I transferred an image onto a cake. I took the image to Kinkos and had them blow it up to this size. I cut it out, and laid all the pieces on the icing to make an impression outline to follow. I thought I was hot stuff, and I do recall all of my neighborhood moms making over how great this cake was! HAHA!

 

 

Nothing was safe during my star tip phase. If it wasn’t moving, I covered it with stars. I am pretty sure I did this one with canned icing too. Might have been Wilton canned buttercream.

 

 

This was my first or second fondant cake. I saw a fondant cake in a magazine and knew I wanted to master that. I bought a box of Wilton fondant, read the directions on the back, and went for it. I used a contoured pan (easier to cover), no filling. Sadly piped royal icing lace points and silk flowers. Plastic Wilton turntable. I was on fire!
 
 
 

This was when I discovered colorflow. I guess I wanted to see how many royal icing things on sucker sticks I could jam into one cake without destroying it. Please help me.

This has got to be the worst cake of all time. Canned Betty Crocker frosting tinted puke green. Crappy borders and plastic plants! Yes folks, plastic ivy from the craft store! What in heck’s name was I thinking? This was for my hubby’s BD, for a family gathering, and I distinctly remember bursting with pride over this one. Somebody pray for me.

In The Beginning….

Hello everyone! How is your summer going? Mine has been busy as heck and it is flying by.

And since it’s hot as Hades down here where I live, I took the opportunity to stay in the A/C and did some deep de-cluttering of my house.
While going through boxes, I found these very old photos of cakes I made about 23 years ago , at the time of my first classes. What a fun surprise to have found them, and to look back at the old days!
These are the actual class cakes. My brother Michael took the class with me. He is such a cool guy. You have met him before here and here. I think mine are the two on the right. The class was given at a local cake supply shop, and would be the equivalent of Wilton 1 and 2 , I would guess.
A sheet cake I did shortly after. The flower basket is made like those panoramic eggs with a mold and granulated sugar. I think that started my infatuation with molds.

Proof that at one time I could make a buttercream rose that was halfway decent.

 

 

Ah, my famous rough icing that I use when I do not want to bother with smoothing the cake. Freehand writing could use a little work, LOL.
I remember bringing this baby shower cake to work at the hospital where I worked at the time. All plastic decorations….. haha

Notice that you can see the cake through the icing. I had not perfected my icing technique yet. 🙂
I seem to have been fascinated by plastic decorations. Tried my hand at block writing since my script left something to be desired.
It tickles me to look back and see how my skills have progressed. There are a lot of good memories tied to these cakes as well, as I did them all for friends and family.

Fleur de Lis Candy Baskets

HELLO DEAR SUGAR FRIENDS!
I have missed you all so much, and I am sorry I have been MIA on the blog. Preparing for the Ultimate Cake Off show, during the Christmas holidays, trying to get both the new DVD and website launched, and the chores of daily life took over for a while. It has been a crazy few months for sure. But things are settling down now, and I will be back to posting regularly.
The new Sheet Cake Secrets and Bonus Lagniappe DVDs are ready to ship. Sadly, the new website launched Wednesday for all of 30 minutes before we had to pull it due to a technical problem. I am frustrated and regretful about the delay; but I assure you that the web techies are working on it as we speak. My gut tells me it is going to be a few more days before it is fixed. Please hang tight because I promise the new DVDs will be worth the wait!
AND we are shooting our next DVD this coming Monday! You ask for ’em, we make ’em!
In fact, we are looking for suggestions for topics for our next 2 DVDs. So if you post a suggestion in the comment section here, you will be entered into a drawing for a free gift! I will give away one of the new tools featured in the sheet cake DVDs! Yay! I love give-aways!

In honor of the Saints big Superbowl win (WHO DAT!), and it just ending Mardi Gras season here, I want to share with you these fabulous fleur de lis candies that my talented and awesome sister Barbara made. She made these beautiful baskets as Christmas gifts this year. But fleur de lis are always in style, and always in season!

These are made with the Spinning Leaf Oreo cookie molds. They have all kinds of molds for different shaped cookies, in many fun designs. The molds are very easy to use as well, and they work great.

 

These were made with molded white chocolate. The molds can be found here. The gold color was achieved by using the PME gold luster spray in the can.

 

 

Each cookie was put into an individual bag and tied with a ribbon.
Beautiful.
Just a gorgeous gift basket.
Get yourself some of those molds and give it a try.
It really is a lot of fun!

I hope you had a blessed and wonderful holiday season with your family and friends. Our was low-keyed but very nice.
 
I am still just buried under work: working on the new website, final editing of the new DVD, and practicing my skills and testing recipes for the Ultimate Cake Off coming soon. I barely have time to shower and brush my teeth these days!

I will come up for air at the end of January, and promise my blog posts will get back to normal then. Thank you for being patient and waiting for my life to return to its normal chaotic self! LOL
