Hi Heather, I don&#039;t refrigerate any of my cakes as I use ganache under fondant and it&#039;s stable at room temperature. But as Sharon has said, if you are refrigerating the cake then the topper should go on after the cake is out of the fridge for the final time. I prefer to add the topper once the cake is all set up where it&#039;s going to be displayed, as it is still quite fragile. If a client is picking up a cake, you can have the flower picks or straws already inserted into the cake where the topper supports will go, and they can just insert the topper themselves.
